How to Make Extremely Fluffy Buttermilk Pancakes

I love pancakes. Wait, I love GOOD pancakes. Too often, we get let down by a bad, box-mix pancake that just doesn't live up to the name, PANCAKE! If you are like me, there is hope. These pancakes live up to the promise. They will restore your faith in your fellow humans. Great breakfast is once again possible! All you have to do is make them yourself and you can have these amazing pancakes. Enjoy!

Fluffy Buttermilk Pancakes

Full recipe (8 to 14 pancakes)
3 cups AP Flour
3 Cups Buttermilk
2 Tbsp Baking Powder
2 Tbsp Granulated Sugar
2 tsp Salt
2 Tbsp Melted Butter

Half recipe (4 to 7 pancakes)
1 ½ cups AP Flour
1 ½ cups Buttermilk
1 Tbsp Baking Powder
1 Tbsp Granulated Sugar
1 tsp Salt
1 Tbsp Melted Butter

Heat cast iron griddle to between 375f-400f
Pour enough batter for 1 pancake into the pan and move it around to get it about 1/2” thick
Cook for 1 minute 48 seconds and then flip the pancake. Cook another 1min 48 sec and transfer the pancake to a sheet pan in your oven set to the lowest setting. Repeat until you run out of batter. Add butter and syrup and enjoy!
