crispy vegan baked vegetables: if you like crispy batter coated deep fried vegetables, this is a healthier and less mess version of deep frying
Batter recipe:
1/2 cup all-purpose flour
1/2 cup rice flour
1/2 cup shredded coconut
1/2 cup ground nuts or (more) flour
1/2 cup olive oil
1 cup water
minced onions, garlic, shallots, green onions
1/2 tsp salt
a little bit of paprika
1/2 tsp italian seasoning
black pepper
Vegetables: mushrooms, broccoli, cauliflower, carrots, potato, green beans, zucchini/squash. Cut them into thick slices
Coat vegetables in batter and arrange them on baking pan with parchment paper. Baked 425F for 30-45minutes depending on how big the vegetables are
