Banoffee Pie - An English Dessert Pie
Made from Bananas, Cream and Toffee
Combined on a Base of Crumbled Biscuits and Butter

INGREDIENTS:
(serves 8)

You will need a pressure cooker
tart tin 23 cm
..
1 can condensed milk
2 tbsp vinegar
..
300 g butter biscuits
1 tsp cinnamon
100 unsalted butter, melted
….
3 bananas
Juice of 1 lemon

300 ml cream, 32%-35% fat
3 tbsp sugar

20 g dark chocolate
….
Almond slices, roasted

Caramel to drizzle on top
(see recipe below)

CARAMEL:
1 cup (200g) sugar
6 Tablespoons (90g) salted butter, room temperature cut up into 6 pieces
1/2 cup (120ml) heavy cream

Add the sugar in a saucepan, over medium heat, stirring constantly caramel until the caramel reaches an golden brown colour.
Immediately stir in the butter. Keep whisking.
Turn the heat off and add the 1/2 cup of heavy cream while stirring.
Allow to slightly cool down before using. Caramel thickens as it cools.
Cover tightly and store for up to 1 month in the refrigerator.
Caramel solidifies in the refrigerator.
Reheat in the microwave or on the stove to desired consistency
