Description – We love doing zoodles for many dishes so the wife was wanting shrimp scampi and so we decided to do this with zoodles instead of traditional pasta. I'm pretty sure we enjoy zoodles much more than the traditional pasta anyway.

So here's a run down of ingredients I used for this shrimp scampi.

Ingredients:

3 zucchini turned to zoodles (see Amazon marketplace above)
2-3 tablespoons unsalted butter
2-3 tablespoons EVOO
4 cloves of garlic
2lbs shrimp of choice
Salt
Pepper
Chopped parsely
Lemon juice (of 1) and its zest

Steps:

1 - Make zoodles and let dry for a few hours to render the water. Can also use a little salt to help too.

2 - Heat Blackstone to medium heat with olive oil. Salt and pepper the shrimp on one side, place that seasoned side on the Blackstone and cook for 1-2 mins. Just getting some color. Flip after 1-2 mins, season that side, add garlic, butter, and lemon juice. Stir until sauce reduces some, and remove.

3 - Heat more olive oil up and add zoodles. Season with salt and pepper. Fry 2-3 mins then add more butter, EVOO, garlic, zest, lemon juice and stir until sauce reduces, then add shrimp. Incorporate the shrimp with zoodles, then place on your serving plate.

Serve immediately.
