Hoe Cakes and Blackeye Pea Salad - Blackstone Griddle Recipe
Hoe cakes is something that's been around for some time. Most like to sop up the pot liquor from greens. I like to eat them with butter.
Ingredients:
Hoe Cake
1 cup self rising flour
1 cup self rising cornmeal
2 eggs
1 tablespoon sugar
Pinch of salt
3/4 - 1 cup buttermilk (depending on consistency)
1/3 cup water
1/4 cup lard/bacon grease/butter/oil (for batter)
1/4 cup lard/bacon grease/butter/oil (for frying)
Mix all ingredients well and let sit for 5 mins. Cook like pancakes and enjoy with butter.
Black eye pea salad:
1 can black eye peas
1/4 cup jalapeno (one jalapeno)
1/4 cup tomatoes
1/4 cup bell peppers
1/4 cup red onion
Cilantro (to taste)
Add all the above to a bowl.
Vinaigrette:
1/4 cup olive oil
1/4 cup vinegar (I used red and rice wine)
Salt and pepper to taste
Tablespoon honey
Mix all the above well and pour over the blackeye pea veggies above.
