Best Shrimp Tacos Ever on the Blackstone Griddle

Shrimp tacos are good, but these shrimp tacos cooked on the Blackstone flat top griddle were phenomenal and really easy. Taco Tuesday just got kicked up a notch! I made my own taco shells and that recipe is below along with the avocado crema.

Shrimp of your choice

Spice mixture:
1 tablespoon kosher salt (back off if sensitive to salt)
1-2 teaspoons cracked pepper
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons coriander
2 teaspoons cumin
1 teaspoon Ancho chili powder (optional gives it a little heat)
2 teaspoons regular chili powder

Taco Shells
Shells
2 Eggs
1 Cup milk
2/3 teaspoon salt
6 Tablespoons yellow cornmeal
3/4 cup corn starch
2 Tablespoon melted butter

Steps for shells:

1 - Beat eggs and salt together
2 - Add cornmeal and mix well
3 - In a separate bowl, mix cornstarch and milk together until smooth
4 - Add cornstarch mixture to eggs and cornmeal mixture.
5 - Melt butter in a separate dish.
6 - Pour melted butter in mixture, stir well.
7 - Make your desired size of shells. See video of how I do mine

Avocado crema
1 Avocado
1/2 - 3/4 cup sour cream
half a lime
1/4 - 1/2 teaspoon salt
1/4 teaspoon pepper

Mash avocado up or in a blender combine all until a consistency that you can squirt or to your liking.

Pickled Red Onions
1 red onion sliced thin
3/4 cup vinegar (can use apple cider too)
1/4 cup water
1 - 2 teaspoon fine salt
1-3 tablespoons sugar (what ever your desired sweetness is)

Place onions in a jar.
Bring the vinegar, water, sugar, salt to a boil and pour over the onions.
Put the lid on the jar and let set for at least 1 hour. Preferably overnight before use.

For some spice add a jalapeno to the onions.

Pico
1/2 cup diced tomatoes
2-3 tablespoons jalapeno
1/4 cup onion
1/4 cup or whatever your taste cilantro
Squirt of oil
Salt and pepper to taste (1 teaspoon salt and 1/4 teaspoon pepper)
