These Rosemary Roasted Potatoes are a delicious and nutritious side dish that can be cooked right in the oven. They are crispy on the outside and soft on the inside, with a delicate fragrance of rosemary.

2 pounds Red Bliss or other thin-skinned potatoes (5 to 6 medium potatoes)

1 tablespoon extra-virgin olive oil

1 tablespoon dried rosemary or 2 tablespoons minced fresh rosemary

2 teaspoons kosher salt

INSTRUCTIONS:

1. Set the oven to 425 °F.

2. Foil or a nonstick baking mat should be used to line a baking sheet.

3. Potatoes should be cut in half and their skins should be left on.
