Coconut milk extraction process

It all starts in the dark early hours when the coconuts are delivered to market. Here they are de-husked and then peeled before being ground into fine particles and sent thru the press. The first squeeze produces the creamiest coconut milk and the second a more watery milk. Curry paste and coconut cream are the basics of many Thai dishes and the two ingredients are often found along side at the local markets. This market was in Chiang Rai, in northern Thailand.
