Today’s recipes is a simple recipe that involves marinating chicken thighs in a salty-savory sauce overnight and cooking the next day. By brining the meat beforehand, you’re left with juicy meat soaked in a soy sauce, garlic and ginger marinade that is absolutely irresistible. Brining the meat is essential to have tender, juicy chicken and is an easy step to do before preparing the chicken to eat. Simply soak the chicken in salted water for a least an hour and it will take on all the right qualities you’re looking for in a good chicken meal.

I always make a big batch, subdividing it and storing what’s not being eaten in the freezer. This kind of meal prep is great for people with busy lives, as it’s easy to defrost and have over rice. It’s even tasty cold, so it’s great for lunch/bento boxes as well.

● Ingredients (for 2~3)

・Chicken thigh ... 2-4 pieces
・Onion ... 1/2

~Marinade~
・Garlic ... 3 to 4
・Ginger ... appropriate amount
・Star anise ... 4 to 5 (optional)
・Sichuan pepper(花椒) ... a little (optional)
・Sake ... 70~100ml
・Soy sauce ... 70~100ml
・Mirin ... 1 tbsp

● Cooking Recipe

① Cut the chicken thigh into bite-sized pieces. Slice the onion and grate the garlic and ginger.

② Place the marinade ingredients (garlic, ginger, star anise, Sichuan pepper, sake, soy sauce, and mirin) into a cup or small bowl and mix.

③ Place the chicken thighs, onions, and marinade into a ziplock bag and shake well to mix thoroughly. Let rest in the refrigerator for a day or overnight.

④ Before cooking the meat to eat remove the star anise.

⑤ Add oil to a heated pan. When the pan is hot, lay the chicken down and sauté.

⑥ To garnish, top with dried chili pepper for a bit of spice.

● Cooking tips

・It is convenient to make a lot and divide it into small portions and store it in the freezer.
・The star anise and Sichuan pepper are optional.
・If the taste is too weak for your liking, increase the amount of soy sauce in the marinade.
・Remove the star anise before cooking the marinated meat.
