Why didn’t Ukraine pre-wire their bridges for demolition before the Russian invasion?

There four reasons why Ukraine didn't do this:
#1. Explosives are normally only handled by combat engineers or "Sappers." Most units don't have a lot of engineers and they would be very busy setting every bridge to explode.
#2. Explosives can change chemically when exposed to heat, light, and moisture. So you can't just leave explosives on a bridge for a few months and hope they are OK when the time is needed.
#3. Explosives are expensive. There is a very real risk of people steaking the explosives or the wiring components.
#4. This means that if you set up explosives, you must guard these sites. This pulls more troops away from the front lines.
