INSTRUCTIONS

1.Whiz butter, rosemary, parsley, garlic, lime zest and 1/2 tsp salt flakes in a food processor until well combined. Set aside.

2.Heat a barbecue or chargrill pan to high heat.

3.Brush rosemary and lime butter over the prawn meat. Grill prawns, cut-side up, without turning, for 4-5 minutes until just cooked through. Transfer to a large platter and serve with lime wedges.

INGREDIENTS

250g unsalted butter, softened

1/2 cup rosemary leaves, finely chopped

1/2 cup flat-leaf parsley leaves, finely chopped

1/2 small garlic clove, finely chopped

Finely grated zest of 1/2 a lime, plus wedges to serve

20 extra-large king prawns, halved lengthways
