Today's video it's a rye sourdough experiment.
I consider Rye sourdough to be one of the most delicious bread around and when I can be creative using the repertoire that I have ACQUIRED in my career as a chef I get excited to find out the end result. In this case, I LOVED IT.
RECIPE:
600 GR WHITE FLOUR
400 GR RYE FLOUR ( a mix of rye berries that I toast)
180 gr SOURDOUGH CULTURE
20 GR SALT
900 GR WATER
