As the name suggests it all! A salad, perfect for Summer and involves seasonal fruits and veggies like tadgola (water apple), white onion, watermelon and many more!

SUMMER SALAD

Ingredients

6 ice apples (tadgola)
20-25 assorted lettuce leaves
1 cup watermelon balls
2 baby red radish, cut into thin roundels
4-5 cherry tomatoes, halved
1 small English cucumber, cut into triangles
½ small carrot, peeled, roughly chopped, boiled and drained
1 small white onion, thinly sliced
20-25 fresh mint leaves
10-15 fresh coriander sprigs
Dressing
2 tsps dried mango powder (amchur)
½ tsp chaat masala
¼ tsp red chilli powder
Crushed black peppercorns to taste
Salt to taste
¼ cup apple juice
2 tbsps chopped fresh coriander leaves
½ tsp onion seeds (kalonji)

Method

1. Peel ice apples and cut into quarters.
2. To make the dressing, combine together dried mango powder, chaat masala, red chilli powder, crushed black peppercorns, salt, apple juice, coriander leaves and onion seeds in a bowl.
3. Tear the lettuce leaves and add into a large bowl. Add watermelon balls, red radish roundels, cherry tomatoes, English cucumber, carrot and ice apple quarters. Add white onion, mint leaves, and coriander sprigs. Drizzle the prepared dressing and toss with light hands.
4. Transfer in a serving bowl. Serve.
