Making Elderberry Syrup Winter Magic

Recipe Elderberry Syrup Winter Magic
1 pint Ripe elderberries
1 lemon
1 llb sugar
10 cloves or more to taste
Citric acid optional

Take the berries off the stalks
Be sure there are no stalks or very unripe berries. Ripe berries are dark and soft
Place berries in a saucepan.
Add water enough to cover them with about 1cm more
Low heat warm for 30 mins. Very low simmer. NOT Boiling
Remove from heat
Pass the whole lot through a sieve or muslin bag. Sieve is better if you want a few bits in final juice
Return to pan and add sugar and cloves and juice of the lemon andboptional citric acid
Low heat for another 15 mins.
Remove from heat and cool.
You can take the cloves out if you like
When cool bottle it in sterilised bottles.
Store in a cool dark place.
Should keep for up to 6 months.
High in vitamin c recommended for immune system against colds and flu.
DISCLAIMER. Consume in small quantities it is very potent. Too much can cause stomach upset. High in vitamin C has potential to be toxic particularly the stalks. RESEARCH YOURSELF BEFORE TAKING THIS SYRUP.
