Carrageenan is a substance that is used in laboratory experiments to induce and study inflammation. This pro-inflammatory compound is now added to variety of foods as a thickening or emulsifying agent, which is very controversial. There is evidence to suggest that the consumption of foods containing carrageenan is associated with increased rate of inflammatory diseases.
