Potato pie, simply amazing !!!

Ingredients:
500 g of potatoes
100 g of stringy cheese (I used provola)
100 g of diced ham
3 tablespoons of Parmesan cheese
2 eggs
200 g of cooked (or frozen) spinach
a pinch of salt
2 tablespoons of breadcrumbs
dried rosemary
a pinch of pepper
extra virgin olive oil
cooking time: in the oven for 30 min at 180 °

Peel half a kg of potatoes
Then rinse them and cut them into large enough pieces
Boil the potatoes for 10-15 minutes until they are soft enough, then drain them
Break 2 eggs into the potato bowl
Add 2 tablespoons of grated Parmesan and a pinch of pepper
Add a pinch of salt
Mash the potatoes with a potato masher
Then add 100 g of diced ham
Stir with a spoon
Set the mixture aside
In a bowl, mix 2 tablespoons of breadcrumbs with 1 tablespoon of grated Parmesan
Add some dried rosemary
Mix with a spoon
Pour a drizzle of extra virgin olive oil into a baking pan
Brush the oil over the entire surface of the pan
Then sprinkle with the breadcrumb mixture we prepared earlier
Then form a layer of potato mixture
Stuffed with 200 g of cooked spinach (if you use frozen ones, defrost them first)
Also stuffed with a few slices of stringy cheese (I used provolone, but you can use whatever you like)
Cover with the remaining potato mixture
Sprinkle with the remaining breadcrumb mixture
And finally pour a drizzle of extra virgin olive oil
Bake in the oven at 180 ° C for 30 minutes
