SPICY GOCHUJANG GINGER WALNUT DRESSING

Instructions:-

1. First, the base. Finely chop half a head of purple cabbage, 4 Persian cucumbers, 1 small red bell pepper, 1 jalapeño (remove the seeds to make things less spicy), 1 avocado, a large handful of fresh chive, an even larger handful of flat parsley. You can use cilantro for the parsley if you'd like.

2. For the dressing, in a small food processor, combine 1-2 inch piece of fresh ginger, 2 fresh garlic cloves, 1/4 cup of SOAKED walnuts (put walnuts in water and let them soak overnight in the fridge), 2 tablespoons of avocado or olive oil, 3 tablespoons rice vinegar, juice of 1 large lime, a solid couple pinches sea salt, ground pepper, 3 tablespoons mayo or avocado mayo, and 2 heaping teaspoons gochujang paste.

3. Give everything a pulse in the food processor, then taste to see if you want to add anything else - if you want it more gingery, add more ginger. If you want less gingery, add more oil or mayo, if you need it more acidic, add more lime, etc.

4. Top salad with your dressing, add toasted black or white sesame seeds, then toss the salad well.

5. Enjoy or serve with your favorite protein (chicken or shrimp would be amazing).
