This video I decided to make some cookies. These Are gluten free Chocolate Espresso Macarons. Chocolate and coffee go great together and the espresso makes the chocolate just a bit richer.

3 cups Shredded Coconut
1/2 cup Dutch Process Cocoa
1/2 cup Honey
1/2 cup Coconut Cream
1 Tablespoon Instant Espresso
1/4 teaspoon Vanilla
Pinch of Salt
2 Egg Whites
