Here’s why you might never want to buy sliced steaks from stores like this ever again. Blade tenderized ribeye steaks, blade tenderized New York strips, top sirloin steaks, chuck short rib steaks, even whole tri tip roasts, even the damned trimmed prime rib roast is blade tenderized. Here you can clearly see the holes in the fat cap made by a blade tenderizing machine (see video).

The problem with this method is that it creates a higher meat safety risk because the blades or needles can transport pathogens from outside of the meat to the center of the meat making it necessary to cook your meat past the USDA recommended 14 degrees Fahrenheit for safe eating. And 145 degrees is the bottom end of medium well doneness.

Here’s what you should get instead. Head over to the vacuum packed wet aged full cuts of meat and look at the label because these are not blade tenderized and you can cook them as rare as you wish, you just have to cut them yourself.
