Flaky Biscuits

2 cups SR Flour, 3 tbs Butter, 1/2 cup Milk, a pinch Salt, a little All Purpose Flour as required.

Measure SR Flour into a large mixing bowl, add salt, add chilled butter to flour and rub into flour until it starts to resemble bread crumbs but with small pieces of butter still visible. Then add milk while mixing until you get a stiff and slightly crumbly dough. Turn out onto a floured board (all Purpose Flour) and knead it a couple of minutes until dough comes together. Roll out with a rolling pin until 1/4 an inch thick, fold in and repeat 3 times. Then finally roll out dough to 1/2 an inch thick and cut into biscuits using an egg ring. Place biscuits close together on a parchment paper lined tray and bake 12 minutes in a preheated oven at 410°F for 12 minutes.

Gravy

1/2 Lb Bacon bits, 2 brown onions, 1/2 Lb raw Sausage, 1/4 cup Milk, 4 cups Water, Salt and Pepper to taste, 3 tbs Butter, 4 tbs All Purpose Flour, 1 tsp Italian mixed Herbs, a little Vegetable Oil or Lard etc.
