Learn how to make keto pancakes for your keto Christmas morning

I like to make my kids special keto breakfasts on the weekends. I make this keto pancake recipe when our Elf on the Shelf returns. They love the keto whipped cream and confectioners Swerve sprinkled all over. These aren’t any ordinary keto pancakes. They are keto gingerbread pancakes!

This easy keto pancake recipe is made with a blender. It’s the perfect recipe if you are planning on having a keto Christmas or you are looking for something easy to whip up on Christmas morning. In this video, I show you how to make keto pancakes with a blender. These keto gingerbread pancakes are made using four eggs and cream cheese. The cream cheese helps to cut down the eggy flavor of the pancakes, so don’t skip it!

KETO GINGERBREAD PANCAKES
Servings: 7

8 oz cream cheese, softened
½ cup coconut flour
¼ cup vanilla ChocZero (or substitute with ¼ cup Swerve + ¼ cup heavy cream)
¼ cup coffee
4 eggs
1 tablespoon ground cinnamon
1 tablespoon ground ginger
½ teaspoon allspice

Blend all ingredients or mix with an electric mixer. Pour onto a greased griddle or skillet and cook over low medium heat.
