Golden eggplants in a crispy batter are easy to prepare. Their excellent taste is favorably emphasized by a light filling with garlic and young dill. This is one of the easiest and tastiest ways to cook eggplant.

Ingredients:
Eggplant - 3 pcs.
Eggs - 2 pcs
Crackers - 150 gr.
Processed cheese -150 gr.
Sour cream - 2 tablespoons
Garlic - 2 cloves
Salt
Dill - a small bunch (can be replaced with your favorite greens)
Tomato - 1 pc.

Cooking time: 15 min

STEPS:

Cut the prepared eggplant lengthwise with a sharp knife. The optimal thickness of the strips is 5–6 mm, and soak in salted water for 5 minutes.
Break 2 large ones into a clean, dry plate. Whisk the mixture with a fork or whisk until smooth. Use the freshest eggs possible.
Pour the breadcrumbs into a separate plate.
Roll eggplant strips in beaten eggs, then in breadcrumbs, and fry until golden brown on both sides in a heated frying pan with sunflower oil.
Filling: grind the processed cheese on a fine grater, add 2 cloves of finely chopped garlic, a bunch of dill and 2 tablespoons of sour cream, salt to taste. Mix everything thoroughly.
Cut the tomato into strips.
Put a little filling on the fried eggplant, put a strip of tomato and spin the roll.
You can serve these eggplants as an independent appetizer or as a main dish, accompanied by your favorite side dish.
