Snack Stick Instructions:
1- Mix cure and seasoning
2.5 tsp. seasoning | 2 tsp. cure | per 1lb of meat
2- Add up to 1/4 cup ice water per lb of meat. Mix thoroughly.
Because the cure acts as a binder, do NOT wait to stuff the casings.
Continue to the next step immediately.
3- Feed the casing strand onto the stuffing nozzle of the grinder.
Cut off excess and tie a knot in the end.
4- Stuff the casing with the seasoned ground meat mixture.
5- Coil and refrigerate to cure overnight.
6- Remove sausage from the refrigerator, let stand at room temp for 1 hour.
7- Place in smoker or oven at 200F until internal temp reaches 165F.
DO NOT over smoke. This will cause a bitter flavor.
8- Refrigerate or freeze to enjoy later.
