Even though it’s a beautiful day outside, we use our grill year round. Grilled chicken is my favorite thing to eat on the keto diet. In this month’s episode of Eat Keto With Me, I show you how to make some easy keto chicken recipes. These are foods that you can keto meal prep for the week.

This video shows you how to make keto enchiladas and a keto salad with chicken & blueberry and keto salad dressing. All of these recipes are made using the meal prep chicken I show you how to make in the beginning of the video.

KETO TOUM (from Cosette’s Kitchen)
1 cup peeled & trimmed garlic
4 cups of avocado oil
1 teaspoon salt
1 squeeze of lemon

Add water to your one cup of garlic to fill to the top. Add the garlic & water to a food processor, process for a few minutes until mixture is mush.
With the food processor running, slowly stream in the oil. It will eventually start to thicken and turn into a mayonnaise consistency.
Once that is achieved, add in the salt and lemon.

KETO GREEN GODDESS DRESSING
1 avocado
7 tablespoons water
¼ cup avocado oil
½ cup packed basil leaves
⅓ cup chopped green onion
2 garlic cloves
Juice of ½ lemon
2 pinches of salt

Pulse everything in a food processor until combined.

KETO CHICKEN VERDE ENCHILADAS

3 cups chopped grilled chicken
1 red bell pepper, roasted and diced
1 ½ cups Monterey Jack cheese
½ big can of green enchilada sauce (look for lowest carb count)
10-12 slices of deli chicken
