KETO CAKE POP RECIPE???? You betcha! Any time my kids go to Starbucks with me, they always beg for a cake pop. Occasionally, I will cave and buy one but I wanted to make them an alternative keto version that is gluten free and sugar free. They keto cake pop are easy to prepare. I used the leftover keto cake from my spice cake earlier this week.

When I make keto cakes, I will make up extra cake or save the cake from cut out the perfect circle layer and use that for my cake pops. Just store the cake in a ziploc bag in the freezer and unthaw when you are ready to make keto cake pops.

KETO CAKE POP RECIPE

Leftover keto cake (about 4 cups)

Keto buttercream frosting
8 oz unsalted butter
2 tablespoons confectioners Swerve (or sweetener of choice)
2 teaspoons vanilla
12 oz cocoa butter
½ cup confectioners Swerve
1 teaspoon vanilla

Crumble the keto cake into a bowl. Add Keto buttercream frosting. Mix until combined using your hands or electric mixer.
Roll the mixture into 1-inch balls. Place a stick or straw into the ball. Chill in the refrigerator for 1 hour or freezer for 30 minutes.
For the candy topping, melt the cocoa butter in the microwave at 30 second intervals until melted. Mix in the powdered Swerve and vanilla.
Dip the cake pop into the candy topping mixture and place upright into homemade cake pop holder contraption. (See video)
Refrigerate or freeze until candy coating has hardened. Dip 1-2 more times in candy topping mixture. Cool after each dipping. It’s okay reheat the candy topping if it cooled at room temperature.
Drizzle coating for the bandages and use sugar free chocolate chips as the eyes.
