Chocolate Meringue is an old fashioned favorite. Traditionally Chocolate Meringue's filling was made on the stovetop. My Chocolate Meringue is made in the microwave with the same old fashioned ingredients.

Granny’s Chocolate Meringue
1 DEEP DISH PIE CRUST (PRE-BAKED)
1 CUP WATER
1 CUP EVAPORATED MILK
1 CUP SUGAR
2 HEAPING TBSP. COCOA
3 TBSP. CORN STARCH
4 EGG YELLOWS (SAVE THE WHITES)
1/4 STICK SALTED BUTTER
1 TSP. VANILLA
Prick pie crust with a fork and bake in 375-degree oven for 10 minutes or until golden brown.
In a glass batter bowl combine sugar, cocoa, and corn starch. Whisk well. Add milk, water and egg yellows and whisk well.
Place in microwave on high for 4 minutes.
Take pudding out and whisk well! Put it back in microwave at 1-minute intervals until thick and creamy. Take out and whisk in vanilla and butter. Place in a pre-baked pie crust. Top with meringue and bake in 350-degree oven for 20-25 minutes until golden brown.
Mix Meringue while pudding is in microwave:
Place 4 egg whites in stand mixer with wire whisk on highest setting. Add 1/4 cup sugar slowly and cream of tartar. Beat 4 minutes.
Caution: Meringue is raw eggs you must cook before serving.

Skillet Fried Potatoes
2 LB POTATOES
COOKING OIL
SALT & PEPPER
CUT UP ONION IF DESIRED
Peel potatoes and rinse under water. Quarter and cut into thin pieces.
IRON SKILLET, WOK, OR LARGE SKILLET
COOKING OIL (CANOLA OR VEGETABLE)
BUTTER (4 TBSP)

Put enough shortening in skillet to be about 1/2” high after melting. Oil must be HOT. Put a piece of potato in oil and once it floats and sizzles WELL, your grease is hot and ready! Now throw in the butter and add potatoes.
It takes a good 20 minutes to fry up taters. DO NOT RUSH. Let potatoes sit in hot oil until they are golden brown before turning it over. You may have to rotate potatoes from edges to middle, so all will brown. Fry until golden brown. Take out with large, slotted spoon and place on a paper towel covered platter/plate. Salt and pepper to taste and serve.

Hamburger Steak
1 LB. 80/20 GROUND BEEF
1 SMALL ONION (SLICED)
1 SMALL BELL PEPPER (SLICED)
3 TBSP. BUTTER
1 TSP. ONION POWDER
1/2 TSP. SALT
1/2 TSP. BLACK PEPPER
1/2 TSP. WEBER STEAK AND CHOP SEASONING (OPTIONAL)

Make 4 patties with your ground beef, then preheat a skillet on medium-high heat. Add your hamburger patties (without adding any oil) to the skillet. Sprinkle them with salt, pepper, and steak seasonings. Cook patties on med-high heat for 4 minutes per side until they get a great sear. Then add your peppers and onion, turn the heat down to med/low, and put a lid on the skillet if you have one. Simmer until peppers and onions are soft. Cook until there is no pink in the patties. (Never consume raw ground beef). Enjoy with your favorite sides!
