Southwestern Pasta Salad
Ingredients:
12 oz Rotini Pasta
1 can Black Beans (drained and rinsed)
1 can Corn (drained)
1 cup Bell Pepper (diced)
1/2 cup Red Onion (diced)
1 cup Cherry or Grape Tomatoes (cut in half)
1/2 cup Cilantro (chopped)
2 Chicken Breast
1 cup Chipotle Ranch Dressing

Chipotle Ranch Dressing Ingredients:
1 cup Mayo
1/2 cup Sour Cream
2-3 Chipotle Peppers in Adobo Sauce (to taste)**
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/4 tsp Salt (to taste)
1/4 tsp dried Chives
1/4 tsp dried Parsley
1/4 tsp dried Dill
1/3 cup Cilantro (packed)
1/2 Lemon (juiced)
