I really want to extend the summer, so today we are preparing a light and tasty pino colada cake that just melts in your mouth.

Jelly layer:
4 pieces canned pineapple
canned pineapple syrup
gelatin 15 grams
1 tablespoon sugar

Cream:
500 UAH cream with a fat content of at least 33%
Sugar 150 grams

Impregnation:
coconut syrup or you can use sugar syrup

cooking time: 45 min

STEPS:
Cut the pineapple pieces into cubes and place in a saucepan, add pineapple juice there so that the pieces are covered. Add 1 tablespoon of sugar and put on fire. It is necessary to boil for 5 minutes and then add melted gelatin, mix well and pour into a silicone mold.
Spread the pineapple pieces evenly over the mold and refrigerate until a hard jelly forms.

Whip the chilled cream until thick sour cream, add sugar and continue to beat until stable peaks form.

Soak the finished cakes with coconut syrup, apply a small amount of cream, then put our gelatin layer on the cream and apply more cream on top, then put the next cake.
We also apply cream to the next cake, then completely cover the entire cake with plenty of cream.

You can decorate in different ways, with coconut flakes, pineapple pieces, or add patterns with cream.

Leave the cake to rest and infuse for about 8 hours.
