Cholesterol is present in all tissues and in greater quantities in the brain, bile and blood. Because of its structure, it is hydrophobic and therefore poorly soluble in water. Its synthesis takes place mainly in the liver and in small quantities it is actually useful and essential for our body:
It helps in the formation and the repair of cell membranes.
It is the precursor of vitamin D, steroid hormones and sex hormones (such as androgens, testosterone, estrogen and progesterone).
It is contained in hemoglobin.
It is the precursor of bile salts.
The types: cholesterol is divided in 2 types: LDL (low density) and HDL (high density). The low-density lipoprotein (LDL) gets deposited on the inner walls of the arteries, forming plaque. The high-density lipoprotein (HDL), on the other hand, removes cholesterol from the arteries and returns it to the liver. Having high HDL levels helps decrease the negative effect of LDL in the formation of plaques.
The risk index: having a value of total cholesterol in the blood above normal is not dangerous in itself, especially if there are no other cardiovascular risk factors. For a better evaluation of the cardiovascular risk, you need to consider the ratio between total cholesterol and HDL. This ratio should be less than 5 for men and 4.5 for women. A person with a total value of 250 and an HDL value of 85 has a risk index of 2.94, which is far better than having a total value of 200 with an HDL value of only 40, where the risk index is 5. As you can see the total values are not as important as you may have thought.
So, what happens if your LDL is very high?
A common mistake is to believe that all cholesterol comes from food. In fact, only 20% comes from food, while the rest 80% is of endogenous origin (which means that it is created by the body). The daily production is between 1-2 g, while the body takes 200-500 mg from food. In fact, you can only get that 20%, if your diet is really unhealthy. Realistically, the percentage is usually 10%.

Animal organs
Egg yolks
Butter
Seafood (lobster, shrimps and oysters)
Meats
Fatty cheeses
