Blueberry Spice Muffins with Freshly Milled Flour | Whole Wheat
I show you how I make a healthy Blueberry Spice muffin from freshly milled flour. I go over some of the parts of the wheat berry and why it is a "good gluten." Follow me in my RV as I show you one of our favorite crowd pleasing muffins!

Recipe:
Mix 2&1/4 cups freshly milled flour, with 1 tsp salt, 1 tsp baking powder, and 1 tsp baking soda.
Add 1/2 cup Olive Oil, 1 egg, 1/2 cup plain yogurt, and 3/4 cup sugar (or 1/2 cup honey)
Mix in 1 tsp cinnamon, 1/2 tsp cardamom, 1/2 tsp fresh ground nutmeg, & 1 tsp vanilla extract.
Stir in 1 cup of blueberries.
Bake at 400 degrees F for 18 minutes.
