How To Fix Sour Espresso with Perfect Puck Prep

If your espresso starts in drips but finishes too fast, you might be getting channelling caused by bad puck prep. Just tamping isn't good enough anymore with more delicate and lighter roasted coffees, so here are a few things I do to get MUCH better espresso with just a few inexpensive steps.
