Nutsedge is one of the most prolific edible plants on Earth. Responsible for a large portion of diet of nearly all known early civilizations, it grows in wet soil with direct sun. Rivers, streams, lakes, and swamps are all home to nutsedge. The waxy leaves repel water are a barrier to infections and chemicals, making it tough to kill. It also re-grows from roots, and picking it just tends to piss it off. Very renewable resource.
Because so many germs, fungi, and parasites also live in this environment, be sure to wash off soil before eating, especially if it's taken from a slow-moving stream, lake, pond, or swamp- boil it first like spaghetti to kill any nasties.
This specimen is seeding- it's at the end of its' life cycle, so the roots are not as sweet or plump compared to ripe roots. Happy Harvesting! #StreetHarvest
