Ingredients
1.4kg mixed greens
4 large sheets filo pastry
4 eggs
200g feta, crumbled
Zest of 1 lemon, finely grated

Steps
1. Preheat the oven to 200 °C.
2. Place a 9-inch deep heatproof skillet over medium-high heat and add vegetables until fully wilted and cooked through. You'll want to do it in batches - place the cooked vegetables in a colander and the colander over a large bowl. Squeeze as much liquid as possible from the greens, then pour into a bowl and cool slightly. Clean your pans.
3. Tear off a piece of parchment paper four inches larger than your skillet and line with the parchment paper.
4. Brush each filo pastry with a drizzle of olive oil, one layer at a time on the greased baking sheet - these should overlap and the edges should overhang.
5. Place eggs, feta, and lemon zest in a bowl with cooled vegetables, season and mix together. Pour into the pan, then fold in the overhanging filo and brush with a little olive oil.
6.Bake for 25 minutes or until crisp and golden. Serve hot straight from the pan or use the paper to pull out the tart and set aside to cool before serving into 8 slices.
