Ingredients
Green salt baked fish:
400g whole sea bream, gutted
400g coarse sea salt
1 egg white
10g parsley
10g dill
10g lemon thyme
2 limes
Yellow salt baked fish:
400g whole sea bream, gutted
400g coarse sea salt
1 egg white
2 tbsp turmeric
4cm piece ginger grated
4 slices of ginger
2 lemongrass stalks
1 lemons
Steps
1. Make your green salt crust: In a food processor, add the stems of the herbs, reserving the leaves. To do this, add a handful of sea salt and the zest of two limes. Pulse until it forms a fairly smooth light green puree. Place this mixture in a large bowl with the remaining salt and egg whites and whisk to combine. Slice the lime and set aside.
2. Make your yellow salt peel: Take a lemongrass stick, remove the tough outer layer, and chop the rest. In a food processor, add turmeric, grated ginger, chopped lemongrass and lemon zest, and a pinch of sea salt. Stir it together until smooth yellow paste forms. Place this mixture in a large bowl with the remaining salt and egg whites and whisk to combine. Take a second piece of lemongrass and pat it lightly to remove the tough outer layer again. Slice the lemon and set aside.
3. To wrap the fish: Preheat the oven to 210°C. Line a baking sheet with parchment paper.
4.Place half of the mixture on a baking sheet and shape the fish with the salt crust of your choice. Place your sea bream (or whatever whole fish you choose to use) over the salt. Lift the top of the fish and fill your cavity with herbs and lime slices for a salty green crust, or lemon slices, ginger, and lemongrass for a yellow crust. Season with black pepper. Cover the top of the fish with the remaining salt crust to expose the head and tail. Dab the salt mixture into the fish, making sure there are no gaps.
5.Grill the fish in the center of the oven for 20 minutes. Remove from oven and let stand for 10 minutes.
6.Carefully crack open the salt crust to reveal the delicious and juicy fish. Serve with new potatoes and freshly steamed spring vegetables for an impressive dinner.
