Kho Ga La Baq
This is a chicken jerky and it will be part of my ramen noodle project. I ran into this recently at a Vietnamese grocery. I’m hooked.
Ingredients for bottom of steaming pot
5 Lbs of chicken breasts
several stalks of crushed lemon grass
One head of garlic cut in half
Three onions
Fresh herbs such as basil
ginger slices
celery seeds
celery stalks
Ingredients for the chicken shreds
Turmeric powder
cumin
Kaffir Lime Leaves*
Tom Yum Goong Paste*
Worcestershire sauce
Fish sauce*
Black Soy sauce*
Cinnamon powder
Allspice powder
A couple tablespoons of Sambal Oelik Chili paste
Cook the broth down from when the chicken breasts were steamed. Once it’s down to about 3/4 of a cup set it aside and mix in the above ingredients. After that mix everything by hand and continue drying it. At the end there’s a tip about how to be certain the excess moisture is gone before you seal it up.
