Amish Baked Oatmeal a quick grab-and-go protein breakfast

This AMISH BAKED OATMEAL recipe is from my cookbook Real Food on a Budget.

Bake the night before. Terrific quick, healthy breakfast.
1½ C. oatmeal
¼ C. sugar or brown sugar
½ C. milk
¼ C. butter or margarine, melted
1 egg
1 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla

Combine all ingredients. Spread in a greased 13" x 9" baking pan. Bake at 350 F for 25-30 minutes, until edges are golden brown. Eat like a granola bar or spoon into bowls and add milk. Top with fruit and/or brown sugar if desired. Serves 4-6.
Note: My boys cut these in squares and eat like cookies with a glass of milk.
