Here’s what to do with carrots 🥕✨
best enjoyed on a mountain🏔✨🥕
Ingredients:
1/2 lb fingerling carrot
Half a bulb of garlic
2 tbsp sugar
1/3 cup water
1 tbsp lemon juice
2 tbsp oil
Served with quinoa or rice
Directions:
• Mince your garlic and cut the tops of your carrots off ( optional )
• Heat a pan on low heat, add oil and once hot add garlic, sauté for 1 minute. ( don’t let the garlic get to browned or burnt! - it should almost have zero colour when you add the carrots ). Add the carrots, mix and cover with a lid for 5 minutes.
• Make your quinoa/ rice and your sugar, water and lemon mixture!
• pour your mixture into the carrots, increase the heat to medium, cover and cook for about 10-12 minutes or until carrots are completely tender. Uncover and let excess liquid to evaporate while. Stirring for about 1-3 minutes.
• serve over your quinoa or rice and enjoy it with a view ✨🏔🥕
