Enchilada Recipe:
2 tomatoes, diced; 2-3 scallions chopped; pablano or green pepper, diced; 1 small chili pepper; 1 can of black beans; 1 Tbs. southwest spice; 6 flour tortillas; 1 cup tomatillo salsa; 1/2 cup shredded cheese; 4 tbs. sour cream.
