WRITTEN RECIPE:
➜ Jerky Ingredients:
1 1/2 lb ground pork (80-85% lean)
2 tbsp sugar
1/4 tsp white pepper powder
1/4 tsp five spice powder
1 tbsp Worcestershire sauce
3 tbsp oyster sauce
2 tbsp light soy sauce
1 tbsp Shaoxing wine
1 tsp sesame oil

Baste Ingredients:
1 tbsp honey
1 tsp water

➜ Instructions:
1) Place all jerky ingredients into a large bowl and mix until well combined with the pork.
2) Cover and refrigerate the marinated pork overnight, occasionally removing from the fridge to mix ingredients again.
3) The next day, cover a baking sheet with parchment paper, then transfer the pork on top.
4) Cover the pork with 1-2 layers of saran wrap, then roll the ground pork until flattened into a 1/8" thick sheet. Cut as necessary to fit the pork pieces into your dehydrator.
5) Mix the honey with the water, then baste one side of the sheets of pork with the honey mixture.
6) Place into dehydrator and dehydrate at 158°F for 7 hours, flipping and basting the other side halfway. Note that times and temperature may vary depending on the make and model of your dehydrator, as well as the thickness of your pork. Adjust as needed.
7) Enjoy!
