Italian Wedding Soup
from time to time I look through my cabinets and fridge to see what needs to be used up, and see what I can make out of it.. this is the result! I'm not Italian, nor is this "authentic"... this is thrown together.
1 sweet yellow onion diced
2 carrots diced
3 celery stalks diced
2 large cloves garlic, mashed
2 quarts chicken stock
1 cup cooked spinach(half a can)
1 lb Italian meatballs
any tiny pasta, abt 3/4 cup
Sautee onion, carrots, celery, and garlic for abt 5mn on low heat, then add 2 quarts chicken stock, bring to a boil then simmer. make meatballs out of Italian sausage and brown them, set meatballs to the side. add pasta to pot, cook until done, add spinach, add meatballs, let cook another 5 to 10 minutes, enjoy.
