INGREDIENTS
6 Eggs
2 Strips bacon
4 Patties Breakfast Sausage
2 Cups Shredded Potatoes
1/2 Onion Diced
1/2 Cup Cheddar Cheese Shredded
1 Tbsp Butter
1 Tbsp olive oil
1 Tbsp Seasoning Blend (Old Bay, Lawry's, Ect)
1 Tbsp Fresh Parsley
INSTRUCTIONS
Preheat oven to 350 degrees.
In a cast iron pan over medium heat, cook the bacon until crispy and the sausage patties until cooked through. Remove and set aside. Drain off excess fat.
Add diced onion and butter to the pan. Cook until onions have softened.
Add shredded potatoes to the pan and stir in onions. Season the potatoes and onions. Continually stir for approximately two minutes.
Roughly chop the cooked sausage patties and mix with the potatoes and onions.
In a separate bowl, beat the eggs and season with the seasoning blend of your choice. Pour eggs over the potato, add 1/3 cup of cheese, and stir.
Transfer pan directly into oven. Cook for 20 minutes. Remove from oven and top with the remainder of the cheese and chopped bacon.
Return to the oven for 5 additional minutes.
Remove from the oven. Garnish with the fresh chopped parsley and serve.
