1) Likutei Moharan, Lesson 22, Part 5:

"Atzmi (my bone) - this is the soul, which is the essence (aetzem) of a person. This is because man's primary essence - the part that he calls "I" - is the soul, which is the partof him that is eternal" (OR "which is the essence that is eternal") (Breslev Research translation)

2. Likutei Halachot, Orach Chaim (Laws of Daily Life) - The Laws of Shabbat - Law 7, Part 74

"Because the essence of a person - the part that he calls "I" - is only the neshama (soul) (as it is written in the lesson 'A Seal within a Seal' Likutei Moharan 22 Part 1). Therefore, when we are speaking with someone in person and we say to him 'you,' the primary intention is to the soul, which is the essence of a person as is known." 

[NOTE: In the Hebrew it uses a second form of "you/to you" seems redundant in English and I don't know how to translate it.]

3) Likutei Halachot, Choshen Mishpat (Civil Law) - The Laws of Theft, Law 5, Part 7:

"Because the essence of a person is the holy neshama (soul) that he possesses, which is his entire being (OR literally - "the whole of a person"), as it is written in the Holy Books and brought in his holy words, his memory should be a blessing, in Lesson 22, that what a person calls "I" is really only the soul, because the flesh of man is called 'man's flesh,' and the essence of man is the soul, and the soul is a part of G-d on High, which is the essence of truth" (OR "which is truth" OR "which is truth itself")

1) ליקוטי מוהר"ן תורה כ"ב אות ה':

"עצמי היא הנשמה שהיא עצם האדם. כי עיקר עצמיות האדם, מה שנקרא אצל האדם 'אני' הוא הנשמה, שהיא עצם הקיים לעד"

2) ליקוטי הלכות או"ח הל' שבת הלכה ז' אות ע"ד:

"כִּי עֶצֶם הָאָדָם מַה שֶּׁנִּקְרָא 'אֲנִי' הוּא רַק הַנְּשָׁמָה (כְּמוֹ שֶׁכָּתוּב בְּהַתּוֹרָה חוֹתָם בְּתוֹךְ חוֹתָם סִימָן כ"ב לִקּוּטֵי חֵלֶק א'), וְכֵן כְּשֶׁמְּדַבְּרִים עִם הָאָדָם לְנֹכַח וְאוֹמְרִים לוֹ 'אַתָּה' אוֹ 'לֵךְ', עִקַּר הַכַּוָּנָה עַל הַנְשָׁמָה שֶׁהוּא עֶצֶם הָאָדָם כַּיָּדוּעַ".

3) ספר ליקוטי הלכות חו"מ הל' גנבה הלכה ה' אות ז': 

"כִּי עִקַּר הָאָדָם הוּא הַנְּשָׁמָה הַקְּדוֹשָׁה שֶׁבּוֹ שֶׁזֶּה כָּל הָאָדָם, כְּמוֹ שֶׁכָּתוּב בַּסְּפָרִים וּמוּבָא בִּדְבָרָיו זִכְרוֹנוֹ לִבְרָכָה בְּסִימָן כ"ב שֶׁמַּה שֶּׁנִּקְרָא אֵצֶל הָאָדָם 'אֲנִי' הוּא רַק עֶצֶם הַנְּשָׁמָה, כִּי בְּשַֹר הָאָדָם נִקְרָא 'בְּשַֹר אָדָם' וְעִקַּר הָאָדָם הוּא הַנְּשָׁמָה וְהַנְּשָׁמָה הִוא חֵלֶק אֱלֹקִי מִמַּעַל שֶׁהוּא עֶצֶם הָאֱמֶת".
