Aubergine/Eggplant Pasta Parmigiana Bake. Big Family Meal. Cheap, Few Simple Ingredients.

This recipe is a fusion of parmigiana and pasta bake. The aubergines or eggplants are mixed in with pasta, tomatoes and mozzarella and baked until golden brown.
The amounts given here make for a big dish that serve up to 8 people, so it is perfect for a big family Sunday meal, and it is also fairly cheap as the ingredients are very basic and economical.

Ingredients
2 medium aubergines chopped in small cubes
2 cloves of garlic
500g of chopped tomatoes tin/carton
250g any pasta you like
300g of double cream
2 medium mozzarella ( about 200g)
Salt and pepper as desired
