Slimming Veg Shredded 'Chicken Breast' King Oyster Mushrooms No-Cook. 'Mock Meat' Series, Part 1

In this video I am making one of my 'Mock Meat Recipe' Series: No-cook, raw slimming Veggie Shredded 'Chicken Breast' using as main ingredient the amazing King Oyster Mushrooms.

These mushrooms have mild flavor & a very 'meaty' texture, perfect for many 'mock meat' dishes .
Top & tail each mushroom. Reserve these for later preparations.
With a fork, scrape the stalk until it breaks apart.

Another quicker method is to use a cheese grater.
The texture is firm but very light & the shreds are all different from each other.

Remove tops & bottoms again.
The bottom parts are tougher, but perfect for a veg scallops recipe, which i am making too.

Grate stalks on larger holes section. shreds will be uniform than fork method,
But still great texture & so much faster preparation.

I am mixing in 20 to 40 grams of raw unsalted butter. This will give the slight fatty flavour required.
Add a pinch of garlic granules + a pinch of pepper & some parsley.
Do not add salt now, as it will draw all the water out, making mushrooms soggy.

Set grill or broiler on medium low & place the plate in so that the butter melt gently for 1 or 2 minutes.
I set 1 minute alarm, take it out & mix the melted butter in the shreds.
And here we have it. It's so light, but filling and satisfying.
So delicious, it can fool any meat eater any day. Add salt only when you are ready to serve it to keep the mushrooms texture firm and meaty .
