How I make cheat veggie scallops with very "Meaty" Texture using the end and tougher parts of king oysters mushrooms to lose weight fast & easy

I have 6 king oyster mushrooms cut out to create very different dishes.
today we are using the bottom parts of the stalks.
they are quite woody & tough so they need to be marinated for few hours.
2 teaspoons of cold pressed sunflower oil.
I am using 2 teaspoons of coconut aminos. Soy sauce or Tamari sauce can used instead.
any herb you like, I often use parsley as it is not overpowering.
a pinch of dry garlic & a pinch of pepper.
a small piece of seaweed, I have some Dulse, to give a hint of seafood taste.
place the king oyster bottom parts in & mix all together.
cover them & let them marinate for 2 min to 8 hours max.
They have absorbed the sauce nicely.
add 20g of unsalted butter in a hot frying pan
add the veggie scallops, cook with a lid @ medium high for 4 to 6 mins
Turn them over & cook with lid @ medium high for a further 4 to 6 mins.
Et voila'! They are firm but juicy texture, soft inside & crispy outside, very savory with a light seafood hint.
I am serving them with some lemon & the yummiest Brussels Sprouts ever.
