CHICKEN ALFREDO AND CRRAM CHEESE SAUCE:
Cook and strain pasta noodles of your choice
Warm cream cheese on stove in medium pot on medium heat. Add 1/2 to 1 stick of butter.
Add salt, garlic, salt and pepper to taste.
Add milk to keep at a pourable consistency.
Bake chicken and shred.
Plate pasta noodles, chicken, sauce and broccoli.
Or feel free to mix them all in one bowl before plating!
CORN CHOWDER AND SALAD
Bring 2 quarts chicken broth to boil. Add about 1 pound of diced potatoes. Add garlic, onion, salt, pepper, parsley (and other spices your family enjoys!). Add 1 quart corn and 2 cups milk. Simmer on medium until potatoes are soft. Top with sour cream, bacon, chives Fix a side salad your family loves!
KEEPING IT REAL CLUB SANDWICH
Toast bread (I used to stove top and real butter). Layer sliced, ham, Turkey, cheese varieties. Add pickle, tomatoes or bacon if you prefer. Add a said of raw fruit or vegetable
CHEESY CHICKEN & RICE CASSEROLE, LIMA BEANS, PEPPERED POTATOES
Bake chicken and shred once cooled. I put my chicken in a crockpot over night with a few cups of water and salt and pepper.
Add shredded chicken meat to bowl along with 1-2 cans cream of chicken. Add 1-2 cups shredded cheese. Salt, pepper, garlic, onion to taste. 1 cup chick broth (this can come from the crockpot stock!) bake on low 200 for about an hour.
Add one quart (or bag) Lima beans to medium pot. Fill with water. Add ham or raw bacon slices. Cover with water. Add salt and pepper to taste. Cool until tender.
Dice half pound to pound of potatoes, add to a large glass or baking dish. Cover with water. Add 1/2 stick butter. Salt, pepper, garlic and onion power to taste.
Bake on low 200 until tender.
BREAKFAST CASSEROLE
Line the bottom of a greased baking dish with a single layer of bread cut into cubes.
Beat 6 eggs and 1 cup milk in a bowl and pour over bread (may add 1/2 stick melted butter)
Brown 1 pound pork sausage. Add over bread/egg/milk mixture. Add shredded cheese for the final layer. Bake at 300 for 30-45 mins.
Add a side of yogurt and fresh fruit.
ROUND STEAK
ENGLISH (sweat) PEAS
HOMEMADE MAC AND CHEESE.
To make crust :Beat own egg and 1 cup milk in one bowl. Add flour in another bowl. Heat lard in skillet.
Add round steak in egg/milk mixture. Then dip in flour. Repeat again. And again for a thicker crust 😃
Drop steak in the lard and fry until well cooked . Put all fried round steaks in baking dish, add 1-2 cups water, garlic and onion powder, salt, pepper, sliced bell peppers, paprika. cover with foil. Bake at 350 for 2-3 hours until tender. Add 1-2 bags organic English peas to pot, add ham or bacon slices. and cover with water. Cook on medium heat until tender. Boil pasta noodles of your choice and strain. Add 1/2 cup Azure cheese sauce, and 1/2 cup shredded cheese to strained noodles along with 1-2 cups milk. stir until cheese is melted.
HOMEMADE HAMBURGER HELPER
SIDE SALAD
STEAMED EDAMAME
brown 3 pound ground beef and strain. Cook 1 box pasta and strain. (I used non gmo shells) In a large pot add meat, shells, azure cheddar cheese powder mix (1/2 cup), 1/2 tablespoon paprika, 1 tablespoon garlic, 1/2 tablespoon cumin, salt and pepper to taste. Add enough milk to stir (1/2-1 cup). Steam edamame. I use one quart bag. Salt to taste.
CHICKEN FAJITAS
Bake chicken in crockpot over night. Add a cup of water, salt and pepper.
Shred chicken when cooled.
I use Stacy’s Orgnaic Tortillas from Azure Market.
In large pan, add shredded chicken, fajita mix and enough water to make the chicken moist.
Brown tortillas in large skillet with real butter.
Add chicken, mozzarella cheese. Add a second browned tortilla. Allow cheese to melt. Remove from skillet. Cut into fourths.
Serve with shredded lettuce and sour cream.
HAMBURGER STEAKS
Patty out ground beef. Add to leftover round steak gravy (see above). Bake at 350 for 2-3 hours. Slice sweet potatoes. Drop in flour. Heat lard in skillet. Add sweet potato sliced to heated lard. cook until crispy. Strain on paper towel. Add salt. Steam broccoli and salt to taste
