Thaddeus was at wit's end about his frustration with not being able to find a job. He, his wife & children were on the verge of homelessness. He took out a small business loan to start up a food truck business, selling Mexican tacos in downtown New Orleans on Tulane Avenue, which didn't work out.

One day, he partnered with his wife, Maurissa & his 2 friends, Nathaniel & "Dr. French". Dr. French had the idea to open up a restaurant in the 9th Ward (close to where the Desire Projects used to be), in hopes that they could draw people to Jesus Christ. They wanted to share the love of Jesus Christ, while serving the community good food. Instead of playing secular radio in their restaurant, they alternated between playing KJV Holy Bible chapters read by Alexander Scourby & also some Christian hymns.

Some of their Creole, Mexican & Cajun infused menu items were:

-crawfish tacos,
-Al Pastor pork Po-Boys,
-lengua (cow tongue) gumbo,
-Andouille sausage huevos rancheros,
-barbacoa jambalaya,
-crab enchiladas,
-red bean, rice & shrimp burritos or quesadillas,
-non-alcoholic horchata, jamaica (hibiscus flower), pina or mango daiquiris,
-praline-covered churros
-king cake sopapilla year round
-rice infused bread pudding
-flan stuffed beignets

& more.

Many souls were saved after leaving the restaurant. Since Thaddeus & his family were on the verge of homelessness, Nathaniel suggested the idea of free showers & 1 free lunch meal a day for the homeless, as long as you showed proof of your homelessness. Nathaniel wanted the free showers to be done in honor of Jesus washing His disciples' feet, & the 1 free lunch meal a day, to be in honor of the manna being sent from heaven.

A homeless man, by the name of Eric Howard, straggled into the restaurant in his wheelchair, asking for his favorite meal. Maurissa was the only 1 working there at the moment.

He said, "You're so pretty. What's your name? "

She nervously smiled & said, "Everyone calls me, Mau-Mau".

He said, "Mau-Mau, it would make MY day today, if you could use your pretty & healthy hands to make me some crab enchiladas, some flan stuffed beignets & some CDM coffee. It would make my day even more, if you wash my feet with those pretty hands."

Mau-Mau blushed because she knew he was trying to hit on her. Eric was VERY LITERAL with wanting Maurissa to wash his feet. So, she made his meal & showed him the restrooms where he could shower & freshen up.

His street homeless caregiver friend, Jeaux-Jeaux (pronounced Jo-Jo) shook his head & said, "Now, C'mon Eric! You ought to know better than that. What if that lady is married?" They were both served the same meal, & Jeaux-Jeaux felt humiliated by Eric sucking & smacking his delicious food so loudly, licking & sucking his fingers & licking all the leftover juices off the plates. Poor Jeaux-Jeaux couldn't even enjoy his own food.

Dr. French walked by & said, "Yes, she is married! But even better, is to be part of the Bride of Christ".

Eric felt convicted in his heart & then apologized to Maurissa. Maurissa forgave him & had compassion on him. She gave him an extra crab enchilada. Eric repented & said that he will start serving Jesus Christ.

They never heard from Eric at that restaurant again. Eric moved out of town. They renamed a meal, "The Eric Howard combo", which consisted of, "3 (not 2) crab enchiladas, 4 stuffed flan beignets & a large coffee", all for $17.99 + tax. That turned out to be their most popular & sold out HIT!
