Perfect in Purple: Red Beet Eggs

Lori Fiechter here with My Indiana Garden and Kitchen. I found several jars of my pickled red beets in the back of the fridge and decided it was time to pickle some eggs. I wasn't sure how long it takes to properly pickle eggs; normally I just forget about them and then they are ready. This time, I ate an egg each day to check on the amount of purple pickled-ness. I'll show you the simple process so you can have perfect purple pickled eggs yourself!
