Lori's Spicy Seeds
(update: I shared these with some 8th graders today and they liked them--one boy said they tasted like beer nuts Chex mix!)
Hello, Lori Fiechter here with a “special request” video: bbq toasted corn nuts, aka “spicy seeds.” These are so simple, they don’t really take a recipe. The only requirement is to have high quality spices. I used smoked paprika, bbq seasonings, and chipotle. You could just use chili powder if you wanted or maybe blackened or Cajun spice.
All you need to do is to heat up the (already cooked) toasted corn in a heavy pan with some oil and then add the seasonings. Paper toweling is helpful to blot up any extra oil. Crunchy and spicy, they have been a sure winner for many years when I’ve shared them with kids!
Maybe next time, I’ll show how to make my chili-lime sunflower seeds. I need to buy some raw seeds for that first!
