Keto tabbouleh salad

1. First, grab half head of cauliflower. Wash well and dry l. Cut off florets and process well until they are super fine riced

2. Add riced cauli to a bowl, then add 3-4 finely finely chopped cucumbers, 2 finely chopped tomatoes, 4-5 finely chopped scallions

3. 1-2 bunches of flat leaf parsley finely chopped, half a handful of fresh mint.

4. Then let’s add a bunch of flavor. Add both the zest & juice of two lemons, finely mince 2-3Cloves garlic

5. then add 1/3 cup to 1/2 cup of a really really good olive oil. Finally, add a few pinches sea salt, fresh ground pepper, and toss well.

Feel free to add more vegetables (like sauteed cabbage, roasted broccoli, roasted cauliflower, roasted brussels sprouts) to your dishes if you're looking for something a bit bulkier. You can usually toss those in the oven and have the rest of the meal ready by the time they're done.
